My first attempt at this recipe was a total disaster. I was using the wrong baking pan and while the flour was rising, it fell out of the pan so you can imagine my shock when I saw smoke coming out of the oven.  It wasn’t particularly a good day but quitting would have made me a loser so I did it again and as you can see, it came out quite well.

Ingredients

  1. 1 ½ cup of all-purpose flour
  2. 1 cup oats
  3. ¼ cup chia seeds
  4. ¼ cup sunflower seeds
  5. ¼ cup choc chips
  6. 1 cup sugar
  7. 1 tablespoon baking powder
  8. 1 teaspoon baking soda
  9. ¼ teaspoon salt
  10. ½ cup butter
  11. 1 teaspoon vanilla extract
  12. 1 cup plain yogurt
  13. ¼ cup milk
  14. 3 eggs
  15. 4 bananas

Instructions

Add flour, oats, chia seeds, sunflower seeds, choc chips, sugar, baking powder, baking soda, and salt in a mixing bowl.

Mash 3 ripe bananas, add butter, plain yogurt, milk, vanilla extract, and eggs into a mixing bowl. Add this mixture to the dry ingredients and mix. 

Using a large loaf baking pan, add the mixed flour.  Take 1 banana and split it into halves and place it on top of the dough. Add sunflower seeds, chia seeds on top of the dough and bake for 30-45 minutes at 180 degrees. 

To check whether the loaf is ready, you can use a kebab stick, if you stick it on the bread and it comes out clean then your bread is ready, if it’s still returning with some flour on it, it’s not yet ready so give it some more time.
