Quick 15 Minute ChickPea Stew
A simple yet nourishing quick chickpea stew

Ingredients
- 1 medium onion
- 2 cloves of garlic
- 2 medium carrots
- 1 medium bell pepper
- 1 chili pepper
- 1 cup baby spinach
- 2 410g can of chopped tomatoes
- 1 410g can of chickpeas
- 1 tbsp peanut butter
- 1 tsp Olive oil
- 1 tsp paprika
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp Salt
- 1/2 tsp black pepper
- 1 cup olives
Instructions
- Heat the stove in a frying pan, add one teaspoon of olive oil, add the onion cut into pieces, and the garlic.
- Add paprika, ground cumin, and ground coriander and continue to fry for a minute to allow the spices to blend.
- Then add the bell pepper with the carrots and the chili pepper and continue to fry for a minute.
- Add a can of tomatoes and lower the stove for the pepper and carrots to continue cooking for about 5 minutes.
- Then add a can of chickpeas, make sure they are rinsed, and one tablespoon of peanut butter.
- Add 1 cup of olives , cut into halves .
- In the final step, add 1 cup of baby spinach and mix with the rest of the stew for a minute or two, or until the spinach melts, which usually takes less than a minute.
Notes
This can be served with rice or some bread.
