Eggplant and Apricot Curry

This recipe can be enjoyed with rice, it is fairly easy to make. One thing I highly recommend is coconut yogurt. There’s a little bit of time using the oven to grill the eggplant, but everything after that is super easy.

Chickpea Stew

This is one of my favorite meals, with some wholewheat pita bread. I repeatedly ate this chickpea stew while struggling with anxiety. I call this meal the savior. You can check out the recipe here.

Chickpea Potato Curry

Easily one of the best curry.  plant-based recipes for beginners should not cause a headache or consume plenty of time. This will take 30 minutes of your time, and there are leftovers to last for an entire week. You can check the recipe here
