The one recipe that I have always enjoyed with sweet corn, is the Mexican chicken salad from Mugg and Bean. It has never disappointed. Although I have to say, their generosity with the lettuce is unnecessary. I do love greens, but lettuce doesn’t make it in the category of the greens I like.

Street corn and the chicken bowl recipe is a favorite of mine. Behind every recipe, there is always a story. And this lovely recipe made it to the cookbook, because of the special place it holds in my heart. While I do not prefer jogging on any happy day, I was dragged into the street by a group of ladies. We ended up on the side of the road, chatting with a tall guy selling grilled corn. And yes, we ended up buying.

Confused over what to do with the sweet corn, one of the ladies suggested we prepare the street corn and chicken bowl. What a lovely and nourishing dish it was, it had to form part of the cookbook.

  • Skillet


  • 1 1/2 cups  frozen riced cauliflower
  • 2 tbsp chopped fresh cilantro, or more for topping
  • 1/2   cup frozen sweet corn kernels
  •  3 oz cooked and chopped skinless chicken breast
  • 1 tbsp reduced-fat cheese
  •  2 tbsp crumbled feta cheese
  • 1 1/2 tsp taco seasoning


  • Bring a skillet sprayed with nonstick spray to medium-high heat. Add cauliflower and1 tsp. taco seasoning. Cook and stir until hot, about 3 minutes.
  • Transfer to a medium bowl, and stir in 1 tbsp. cilantro. Cover to keep warm.
  • Remove skillet from heat; clean, if needed. Respray and return to medium-high heat. Add corn, and cook and stir until lightly blackened, about 4 minutes. Add chicken and the remaining 1/2 tsp. taco seasoning. Cook and stir until hot, about 1 minute.
  • Remove skillet from heat. Add cheese, 1 tbsp. feta, and the remaining 1 tbsp. cilantro. Stir until thoroughly mixed.
  • Transfer to the medium bowl, and top with the remaining 1 tbsp. feta.
